Incredible LS Vibe Gluten Free Pancakes

This recipe is one of our favorites…
LIfe Shotz Viva Vanilla Vibe Pancakes (Gluten and Dairy Free)
Yields about 10 pancakes. Can be doubled. I used King Arthur’s Gluten-Free Multi-Purpose Flour
1 large egg
2 T. Melted butter or coconut oil
1 C. Almond milk (I used Pacific Organic Unsweetened Vanilla)
1 scoop Viva Vanilla Vibe
3/4 tsp. baking powder
1/2 tsp. salt
1/2 + 1/8 tsp. xanthum gum
1) Whisk together egg, melted butter or oil and milk
2) In a separate larger bowl whisk together all dry ingredients
3) Stir egg mixture into dry mixture. (If necessary, to get your preferred consistency, add more milk 1 T. at a time and mix in. Gluten free flours have a tendency to absorb more liquid than regular flour)
Note: for fluffier pancakes allow batter to sit for about 15 minutes. Again check consistency and adjust if you like.
4) Preheat griddle to 350 degrees or a fry pan to medium heat. Lightly grease. Scoop batter, using slightly under-filled 1/4c measuring cup, onto griddle or fry pan. Cook for about 2 minutes or until bubbles start to form and break. Flip pancake, it should be golden brown (adjust heat or cooking time accordingly). Cook for about 2 minutes or until golden brown.
Serve hot with butter, syrup or jam (Jeff likes it without any topping)
